These muffins are a perfect balance of wholesome ingredients, natural sweetness, and a boost of protein (thanks to our Peaches & Cream Protein Ball Mix). They’re quick to whip up, completely gluten-free, and the perfect snack to fuel your day.

Ingredients:
- 200g Peaches and Cream Protein Ball Mix
- 175g rice flour
- 200g yoghurt of your choice
- 100g mashed banana
- 100g fresh blueberries
- 100g tin peaches, drained and diced
- 1 tsp baking powder and 1 tsp baking soda
- Optional: 40g white chocolate chips
Method:
- Preheat your oven to 180°C (350°F) and line a muffin tray.
- In a large bowl, mix together the rice flour, Peaches and Cream Protein Ball Mix, baking powder, and baking soda.
- Add the yoghurt and mashed banana, stirring until just combined. The trick is not to overmix—it keeps the muffins light!
- Gently fold in the blueberries and if you want a little indulgence add some white choc chips.
- Spoon the batter into your muffin tray, filling each cup about ¾ full.
- Bake for 30-35 minutes, until golden brown and a toothpick comes out clean.
