Peaches & Cream Blueberry Muffins

As the resident nutritionist at Sneaky Wholefoods Steph is always baking snacks that pack a punch of nutrients without compromising on taste. And these Peaches and Cream Blueberry Muffins are no exception.

These muffins are a perfect balance of wholesome ingredients, natural sweetness, and a boost of protein (thanks to our Peaches & Cream Protein Ball Mix). They’re quick to whip up, completely gluten-free, and the perfect snack to fuel your day.

Ingredients:

  • 200g Peaches and Cream Protein Ball Mix
  • 175g rice flour
  • 200g yoghurt of your choice
  • 100g mashed banana
  • 100g fresh blueberries
  • 100g tin peaches, drained and diced 
  • 1 tsp baking powder and 1 tsp baking soda
  • Optional: 40g white chocolate chips

Method:

  1. Preheat your oven to 180°C (350°F) and line a muffin tray.
  2. In a large bowl, mix together the rice flour, Peaches and Cream Protein Ball Mix, baking powder, and baking soda.
  3. Add the yoghurt and mashed banana, stirring until just combined. The trick is not to overmix—it keeps the muffins light!
  4. Gently fold in the blueberries and if you want a little indulgence add some white choc chips.
  5. Spoon the batter into your muffin tray, filling each cup about ¾ full.
  6. Bake for 30-35 minutes, until golden brown and a toothpick comes out clean.
  7. Let them cool (if you can wait!), and enjoy these protein-packed muffins that’ll keep you going
