For the dough
150g rice flour (or ground oats)
50g almond meal
200g Greek yogurt or non-dairy yogurt of choice
2 tsp natural granulated sweetener
1/2 tsp baking soda
1/4 tsp cinnamon
Method
Preheat the oven
Preheat your oven to 190°C and prepare a silicone cupcake or muffin tray.
Make the dough
In a large bowl, combine the rice flour, almond meal, granulated sweetener, baking soda, and cinnamon. Add the yogurt and mix well. Using your hands, knead the mixture until a smooth dough forms.
Form the pie shells
Take a tablespoon of dough and press it into each well of the silicone tray, creating a small hollow in the center for the filling. Save some dough for the star-shaped toppers!
Prepare the Filling
In a bowl, mix together the minced fruit mixture, Nuttelex, cinnamon, sweetener, and water until combined.
Fill the Tarts
Scoop 1-2 tablespoons of the filling into each prepared tart shell.
Add the Star Toppers
Roll out the remaining dough and cut out mini stars using a cookie cutter or knife. Place a star on top of each tart, pinching the edges gently to secure.
Bake to Perfection
Bake in the preheated oven for 15-20 minutes, or until the tarts turn golden brown.
Add the Finishing Touch
Dust with icing sugar and let the tarts cool before serving. These can also be chilled for a refreshing festive treat!
